Wine pairings for Makaroni Po-Flotski

Alcohol: Black Tot Rum

Rosso: Montevetrano Montevetrano, Castello di Rampolla Sammarco, Tolaini Valdisanti

A dish hearty enough for sailors needs a bold red to go alongside it – preferably one from Central or Southern Italy. In the spirit of international peace, a red with “international” grapes (which are really French, but…) seems appropriate. This pasta’s beef and Parmigiano-Reggiano can certainly handle a full-flavored and full-bodied wine. Montevetrano is a Campanian blend of Cabernet Sauvignon, Merlot and Aglianico. Sammarco is a Tuscan bottling of mostly Cabernet Sauvignon with a splash of Sangiovese. While both of these wines are aged in new oak, they have enough fruit to absorb and integrate the oak’s toasty notes. While it would seem no expense should be spared when toasting peace, if you don’t have a stately budget, another Super Tuscan like the Valdisanti – composed of Cabernet Sauvignon, Sangiovese and Cabernet Franc – will keep your ship sailing smoothly.

Sometimes it’s not just the food but also the story that needs a pairing. This week’s story blends exceptionally well with Black Tot Rum. Black Tot was the daily rum ration given to the British Navy sailors for 300 years. Today, its last drops are still available…at a very steep price…but well worth for a sip of history and a celebration of peace.
